Ingredients

  • 1/4 lb. turkey bacon
  • 1 Tbsp. margarine
  • 1/4 lb. mushrooms
  • 1 small onion
  • 1/4 c. flour
  • 1/2 tsp. thyme
  • 2 c. chicken broth
  • 1 c. milk
  • 2 c. twist macaroni
  • 1 pkg. frozen asparagus
  • 1 c. diced cooked turkey
  • 8 oz. shredded Mozzarella cheese
  • 1/3 c. Parmesan cheese
  • pepper

Instructions

  1. Cook and drain the turkey bacon; set aside.
  2. Add sliced mushrooms and chopped onion to the skillet.
  3. Sauté for 2 to 3 minutes.
  4. Stir in flour, thyme, and pepper.
  5. Cook and stir for 1 to 2 minutes.
  6. Add chicken broth and milk, stirring constantly.
  7. Bring mixture to a boil.
  8. Cook until the sauce thickens.
  9. Stir in Parmesan cheese and simmer for 4 minutes.
  10. In a large bowl, combine bacon, sauce, cooked macaroni, thawed asparagus, diced cooked turkey, and 1 1/2 cups shredded mozzarella cheese. Toss lightly.
  11. Spoon the mixture into a lightly greased 2 1/2-quart casserole dish.
  12. Sprinkle with the remaining cheese.
  13. Cover and refrigerate for up to 24 hours.
  14. Bake covered in a 350°F oven for 50 minutes or until bubbly.
  15. Let stand before serving.
