Ingredients

  • 3/4 cup butter
  • 2 tablespoons all-purpose flour
  • 2 (6-8 oz) skinned, boned chicken breasts
  • 1 cup Italian seasoned dry bread crumbs
  • 1 1/2 cups chicken stock
  • 3/4 cup thinly sliced fresh mushrooms
  • 2 tablespoons chopped prosciutto
  • Juice of 1/2 lemon
  • 1/4 cup dry white wine
  • 8 oz shredded Provel cheese

Instructions

  1. Melt 1/4 cup of butter in a saucepan; set aside.
  2. Cut the remaining 1/2 cup of butter in half.
  3. Put the butter and flour in a mixing bowl.
  4. Mash with a fork to make a creamy mixture.
  5. Set aside.
  6. Cut each chicken breast in half to make 4 pieces.
  7. Wash chicken and drain off excess water.
  8. Dredge chicken in bread crumbs.
  9. Using a pastry brush, brush the reserved melted butter on the chicken to moisten the bread crumbs.
