Ingredients

  • 1 pkg. boneless chicken breasts
  • 2 Tbsp. vegetable oil
  • 4 green onions
  • 2 tsp. minced garlic
  • 1 lb. zucchini
  • 1/2 c. dry white wine
  • 3 carrots
  • 1 c. chicken broth
  • 1/4 c. fresh parsley
  • 1/2 tsp. dried oregano
  • 1/2 tsp. pepper
  • spaghetti or angel hair pasta
  • 1/3 c. grated Parmesan cheese

Instructions

  1. Slice chicken into thin strips.
  2. Saute chicken in 1 tablespoon vegetable oil over medium-high heat.
  3. Add green onions and minced garlic; cook for 1 minute.
  4. Heat remaining oil in skillet; add zucchini and carrots and saute for 2 minutes.
  5. Stir in chicken broth, white wine, parsley, dried oregano, and pepper.
  6. Simmer the mixture for 30 minutes.
  7. Cook pasta according to package instructions.
  8. Serve the chicken and vegetable mixture over cooked pasta.
  9. Sprinkle with grated Parmesan cheese before serving.
