Ingredients

  • 20 oz. can pineapple chunks in syrup
  • boiling water
  • 1/2 cup walnuts
  • 2 Tbsp. vegetable oil
  • 1 chicken breast, cut in strips
  • 1 garlic clove, pressed
  • 1 medium onion, sliced
  • 2 Tbsp. ginger root, chopped
  • 1/2 lb. broccoli, cut in flowerets
  • 1 Tbsp. cornstarch
  • 3 Tbsp. soy sauce

Instructions

  1. Drain pineapple chunks in syrup and set aside.
  2. Pour boiling water over walnuts, then drain.
  3. Heat oil in a skillet and stir-fry walnuts until brown.
  4. Remove walnuts from the skillet.
  5. Stir-fry chicken strips, pressed garlic, sliced onion, and chopped ginger until chicken turns white.
  6. Remove chicken mixture from the skillet.
  7. Add broccoli florets to the skillet and stir-fry until tender-crisp.
  8. Return nuts and chicken mixture to the skillet.
  9. Add pineapple chunks to the skillet.
  10. Combine reserved pineapple syrup, cornstarch, and soy sauce in a small bowl.
  11. Pour the sauce into the skillet and cook until thick and bubbly.
  12. Serve the stir-fry over cooked rice.
