Chicken Potato Packets
Ingredients
- 4 boneless skinless chicken breast halves ⓘ
- 1/4 cup olive oil ⓘ
- 3 teaspoons rosemary ⓘ
- 1 teaspoon thyme ⓘ
- 1/2 teaspoon basil ⓘ
- 2 teaspoons garlic, minced ⓘ
- 8 small red potatoes, quartered ⓘ
- 1 small zucchini, cut in cubes ⓘ
- 1 cup chopped onion ⓘ
- 2 tablespoons butter, cubed ⓘ
- 1/2 teaspoon salt ⓘ
- 1/4 teaspoon pepper ⓘ
Instructions
- Place each chicken breast on a piece of heavy duty foil.
- Mix the oil, rosemary, thyme, basil and garlic.
- Drizzle over the chicken.
- Top with potatoes, squash, onion, butter, salt and pepper.
- Fold the packets up securely.
- Bake on a cookie sheet at 375* for 35-40 minutes, until chicken juices run clear.
