  • 1 c. mayonnaise
  • 1/4 c. milk
  • 2 Tbsp. green onion slices
  • 1/2 tsp. ground ginger
  • 1/2 c. sliced almonds

Instructions

  1. Drain pineapple, reserving 1/4 cup of the liquid.
  2. Pound chicken breasts to 1/4-inch thickness.
  3. Place green and red pepper strips on the end of each chicken breast and roll up.
  4. Secure each roll with wooden toothpicks.
  5. Coat the chicken rolls with flour.
  6. Place the coated chicken in a 12 x 8-inch baking dish.
  7. Mix together 1/2 cup mayonnaise, milk, green onion slices, and ground ginger; brush this mixture over the chicken rolls.
  8. Sprinkle sliced almonds on top of the chicken.
  9. Bake at 350°F for 40 to 45 minutes.
  10. Combine remaining mayonnaise, pineapple juice, and cheese; stir over low heat until smooth.
  11. Add drained pineapple to the sauce and heat thoroughly.
