Ingredients

  • 2 1/2 cups diced cooked chicken
  • 1 cup finely chopped celery
  • 1 cup seedless grapes
  • 1/2 cup well-drained pineapple
  • 1 cup chopped pecans or walnuts
  • 1 teaspoon finely minced onion
  • 1 teaspoon salt
  • 1 cup mayonnaise
  • 1/2 cup heavy cream

Instructions

  1. Combine the diced, cooked chicken with the finely chopped celery, seedless grapes, well-drained pineapple, chopped pecans or walnuts, minced onion, and salt in a large bowl.
  2. Add mayonnaise to the mixture and toss lightly until well mixed.
  3. Whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the chicken mixture.
  5. Chill thoroughly before serving.
