Ingredients

  • 6 pieces bacon
  • 2 medium onions
  • 2 Tbsp. butter
  • 1 (13 3/4 oz.) chicken broth
  • 1/2 pt. light cream
  • pepper to taste
  • 1 bay leaf
  • 2 stalks celery
  • 1 (16 oz.) can creamed corn
  • 1 can regular corn
  • 12 oz. minced clams
  • 4 to 5 medium potatoes

Instructions

  1. Fry the bacon until crisp and set aside.
  2. Leave the bacon drippings in the pan and sauté the chopped onions until translucent.
  3. Add the bay leaf, chicken broth, chopped celery, potatoes, clam juice, and pepper to the pan.
  4. Cook, covered, for 15 to 20 minutes until the potatoes are tender.
  5. Add the creamed corn, regular corn, and minced clams to the soup.
  6. Cook, covered, for an additional 5 minutes.
  7. Stir in the light cream and heat through.
  8. Crumble the cooked bacon and add it to the chowder just before serving.
