Ingredients

  • 1 c. yellow cornmeal
  • 1/2 c. oat bran
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. cumin
  • 1/8 tsp. chili powder
  • 1/4 c. margarine
  • 1 c. plus 2 Tbsp. chicken broth
  • 8 oz. boneless, skinless chicken breast, cooked and chopped fine
  • 1/2 c. tomato sauce
  • 4 Tbsp. canned chopped green chilies, divided
  • 1 pt. cherry tomatoes, chopped
  • 1/4 c. chopped cilantro
  • 1/4 c. chopped onion

Instructions

  1. Process cornmeal, oat bran, baking powder, salt, cumin, chili powder, and margarine in a food processor until blended.
  2. With the machine running, pour in chicken broth; process until the mixture is blended.
  3. Let the batter stand for 20 minutes.
  4. Combine cooked, chopped chicken, tomato sauce, and 2 tablespoons of chopped green chilies in a small bowl.
