Ingredients

  • 4 boneless chicken breasts
  • 8 oz fresh mushrooms
  • 1/2 stick margarine
  • 2 Tbsp flour
  • 1 pt fresh cream
  • 1/2 small onion
  • 2 Tbsp chopped garlic
  • 3/4 cup Mozzarella cheese
  • 1/2 cup Parmesan cheese
  • 8 oz vermicelli or linguine spaghetti

Instructions

  1. Simmer sliced mushrooms, chopped garlic, and chopped onion in margarine until tender.
  2. Add flour to the mushroom mixture and cook until bubbly.
  3. Pour in fresh cream and cook until the sauce thickens.
  4. Add cooked, chopped chicken breasts and half of the mozzarella cheese to the sauce, stirring to combine.
  5. Pour the sauce over cooked linguine or vermicelli and mix well.
  6. Sprinkle Parmesan cheese over the top before serving.
