Ingredients

  • 3 lb. chicken fryer
  • 1 tsp. salt
  • 1 tsp. red pepper
  • 1/2 c. flour
  • 1/4 c. cooking oil
  • 1 (9 oz.) chunk pineapple with liquid
  • 1/2 c. blanched almonds
  • 1/2 c. raisins

Instructions

  1. Wash the chicken and pat it dry.
  2. Mix salt, red pepper, and flour together.
  3. Coat the chicken with the flour mixture.
  4. Brown the coated chicken in cooking oil until golden brown.
  5. Add pineapple with liquid, raisins, and blanched almonds to the skillet.
  6. Transfer the skillet to the oven and cook until the chicken is tender, about 1 hour.
  7. Remove the chicken from the sauce.
  8. Place the chicken back in the oven to crisp the skin.
  9. Serve the sauce as gravy alongside the chicken.
