Ingredients

  • 1 lb cooked, diced chicken
  • 1 lb pasta
  • 1 medium yellow onion
  • 2 celery ribs
  • 1 lb grapes
  • 1 cup toasted walnuts
  • 2 cups mayonnaise
  • 1/2 cup honey
  • 1/2 lemon, juiced
  • 2 teaspoons dried thyme
  • 1/4 cup dijon mustard
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Place chicken onto a sheet tray and cook in the oven at 350°F until fully cooked.
  2. Chill the cooked chicken and set aside.
  3. Cook the pasta until soft, then toss with a small amount of olive oil and chill.
  4. Dice the yellow onion and celery, then set aside.
  5. Wash and pick the grapes, then set aside.
  6. Toast the walnuts until golden and set aside.
  7. In a large bowl, combine the cooked pasta, diced chicken, diced onion, diced celery, grapes, and toasted walnuts.
  8. In a separate bowl, whisk together mayonnaise, honey, lemon juice, dried thyme, dijon mustard, and heavy cream to make the dressing.
  9. Pour the dressing over the salad ingredients and toss to combine.
  10. Season with salt and pepper to taste and serve chilled.
