Ingredients

  • 2 cups self-rising cornmeal
  • 3 eggs
  • 1 3/4 cups buttermilk
  • 1/4 cup oil
  • 1 teaspoon sugar
  • 1 whole chicken
  • 1/2 cup onion
  • 1/2 cup celery
  • 4 slices white bread
  • 1 can cream of chicken soup
  • salt and pepper to taste
  • 2 chicken bouillon cubes
  • 1 cup water

Instructions

  1. Preheat oven to 450°F.
  2. Grease an iron skillet and heat it.
  3. Beat eggs; add self-rising cornmeal, buttermilk, oil, and sugar.
  4. Blend well; pour into prepared skillet.
  5. Bake for 20 to 25 minutes or until brown.
  6. Boil chicken until tender; remove meat from bones and set aside.
  7. Set aside chicken broth from boiling.
  8. Crumble cooked cornbread into a large pan.
  9. Add 4 slices of white bread to the cornbread.
  10. Pour chicken broth over hot bread and mix well.
  11. Add chopped onion, chopped celery, cooked chicken meat, cream of chicken soup, and chicken bouillon cubes.
  12. Pour mixture into a greased 13 x 9 x 2-inch baking pan.
  13. Bake for about 30 to 45 minutes at 350°F or until brown.
