Ingredients

  • 2 fryer chickens, cut into quarters
  • 1/2 cup flour
  • 2 (16 oz.) cans plums, pitted and drained
  • 2 cups red wine
  • 1/4 cup minced onion
  • 2 tablespoons white vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons cornstarch
  • 4 minced garlic cloves
  • 1 teaspoon salt
  • 8 whole cloves
  • 1/2 teaspoon ginger
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon oregano
  • 1/4 teaspoon pepper

Instructions

  1. Skin the chicken and coat it with flour.
  2. Brown the chicken in a skillet, then place it in a baking dish.
  3. Combine the remaining ingredients: plums, red wine, minced onion, white vinegar, brown sugar, cornstarch, minced garlic, salt, cloves, ginger, dry mustard, oregano, and pepper.
  4. Pour the mixture over the chicken.
  5. Bake at 350°F (175°C) for 50 minutes.
