Ingredients

  • 2 large cans chile with beans or homemade
  • 1 to 2 lb ground beef or ground turkey
  • 1/2 chopped onion
  • 1/2 to 1 lb grated or chunked Cheddar cheese
  • 1/2 bag tortilla chips
  • salt and pepper to taste

Instructions

  1. Brown the ground beef or turkey in a skillet.
  2. Drain the cooked meat to remove excess fat.
  3. Warm the chile with beans in a separate pot.
  4. In a large casserole dish, combine the cooked meat, warmed chile beans, and chopped onion.
  5. Mix thoroughly, then add grated or chunked Cheddar cheese and stir through.
  6. Add tortilla chips and stir gently to combine before serving.
