Ingredients

  • 2 lb. extra lean boneless pork
  • 1 lb. boneless beef chuck
  • 1 medium onion, chopped
  • 6 to 8 cloves garlic, minced
  • 1 can whole tomatoes (28 oz.), mashed
  • 2 (4 oz.) cans green chili peppers, drained, seeded and chopped
  • 1/3 cup chopped parsley or 2 Tbsp. dried parsley flakes
  • 1/4 tsp. salt
  • 1/2 tsp. ground black pepper
  • 2 tsp. cumin seed or 1 Tbsp. ground cumin
  • 1/2 cup beef broth
  • 2 whole cloves
  • 1 large green pepper, seeded and chopped

Instructions

  1. Cut the pork and beef into 1-inch cubes.
  2. Combine all ingredients in the crock-pot and stir thoroughly.
  3. Cover and cook on low setting for 8 to 10 hours.
  4. Before serving, taste for seasoning and add salt and cumin as needed.
