Ingredients

  • 2 tsp. shortening
  • 1 small onion, chopped
  • 1 lb. ground beef
  • 2 1/2 cups canned tomatoes
  • 1 can kidney beans
  • 2 Tbsp. chili powder
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1 small green pepper, chopped
  • cornbread batter

Instructions

  1. Melt shortening in a large skillet over medium heat.
  2. Add chopped onion, chopped green pepper, and ground beef; cook until beef is browned and vegetables are tender.
  3. Stir in canned tomatoes with juice into the skillet mixture.
  4. Add kidney beans, chili powder, salt, and pepper; mix well.
  5. Pour the mixture into a 2-quart casserole dish.
  6. Top with cornbread batter evenly over the meat mixture.
  7. Bake in a preheated 350°F (175°C) oven for 30 minutes until golden and bubbly.
