Chili-Cheese Bites

Ingredients

  • 1 1/2 cups fine saltine cracker crumbs
  • 6 tablespoons margarine, melted
  • 2 cups shredded Cheddar cheese
  • 1 teaspoon taco seasoning
  • 1 (8 oz) package cream cheese
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon granulated garlic
  • 3 eggs
  • 1 (4 oz) can chopped green chilies
  • 2 tablespoons finely chopped onion

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Bring cheeses to room temperature.
  3. Combine cracker crumbs and melted margarine in an 8-inch square pan.
  4. Press the mixture onto the bottom and up the sides of the pan to form a crust.
  5. Bake for 10 minutes and set aside.
  6. Reduce oven temperature to 250°F (120°C).
  7. In a large mixing bowl, blend the cheeses at medium speed.
  8. Add cayenne pepper and garlic.
  9. Add eggs one at a time, beating after each addition.
  10. Fold in chopped green chilies and chopped onion.
  11. Pour the cheese mixture into the prepared crust.
  12. Bake for 1 hour until set.
  13. Cool and cut into 1-inch squares.
  14. Serve at room temperature or slightly chilled.
