Ingredients

  • 3 Tbsp. all-purpose flour
  • 2 tsp. salt
  • 2 tsp. chili powder
  • 1/4 tsp. pepper
  • 1 to 2 lb. beef round steak
  • 1/4 cup shortening
  • 2 cups chopped onion
  • 1 (16 oz.) can tomatoes
  • 1 cup shredded sharp Cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a cup, combine flour, salt, chili powder, and pepper.
  3. Trim excess fat from the beef round steak.
  4. Cut the steak into six pieces.
  5. Place the meat on a board and sprinkle with the flour mixture.
  6. Pound the flour mixture into the meat on both sides.
  7. In a skillet, melt shortening over medium heat.
  8. Add chopped onions and cook until tender.
  9. Add the tomatoes and simmer for 10 minutes.
  10. Transfer the beef pieces to a baking dish.
  11. Pour the tomato and onion mixture over the meat.
  12. Bake in the preheated oven for 15 minutes.
  13. Sprinkle shredded cheddar cheese over the top and bake for an additional 10 minutes until cheese is melted.
