Chili Corn Bread

A cheesy, spicy cornbread infused with green chilies and enriched with cheese, perfect as a savory side for family dinners or gatherings with bold flavors.

Ingredients

  • 1 1/2 cups white cornmeal
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon sugar
  • salt to taste
  • 1/2 cup melted shortening
  • 1 can cream-style corn
  • 3/4 cup milk
  • 2 eggs, beaten
  • 3 cans green chilies, chopped
  • 2 cups grated cheese

Instructions

  1. Mix all ingredients except cheese and chilies.
  2. Pour half of the batter into an iron skillet.
  3. Cover with half of the cheese and chopped green chilies.
  4. Add the remaining batter on top, then cover with the rest of the cheese and chilies.
  5. Bake at 400°F for 45 minutes.
  6. Cool for 10 minutes before removing from the skillet.
