Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 2 Tbsp sugar
  • 1 Tbsp baking powder
  • 2 tsp chili powder
  • 3/4 tsp salt
  • 1 scallion
  • 1 cup milk
  • 1/2 cup applesauce
  • 1 egg
  • 1 can corn, drained

Instructions

  1. In a mixing bowl, combine the flour, cornmeal, sugar, baking powder, chili powder, and salt.
  2. Chop the scallion.
  3. In a separate bowl, beat the milk, applesauce, and egg until just combined, then stir in the chopped scallion and drained corn.
  4. Stir the flour mixture into the milk mixture until just combined but still lumpy.
  5. Spoon the batter into prepared muffin pans.
  6. Bake at 400°F (200°C) until the edges start to brown, about 15 to 20 minutes.
