Ingredients

  • 1 lb ground beef
  • 3/4 cup chopped onion
  • 1 (15 1/2 oz) can red kidney beans, drained
  • 1 (8 oz) can tomato sauce
  • 1 (7 1/2 oz) can tomatoes, cut up
  • 1/2 cup elbow macaroni
  • 2 to 3 teaspoons chili powder
  • 1 (4 oz) can diced green chili peppers, drained
  • 1/2 teaspoon garlic salt
  • 1/2 cup shredded Monterey Jack or Cheddar cheese

Instructions

  1. Drain the kidney beans.
  2. In a large skillet, cook the ground beef and chopped onion until the meat is browned.
  3. Drain excess fat from the skillet.
  4. Stir in the drained beans, tomato sauce, undrained tomatoes, uncooked elbow macaroni, drained green chili peppers, chili powder, garlic salt, and 1/4 cup water.
  5. Bring the mixture to a boil, then reduce heat to low and cover.
  6. Simmer for 20 minutes, stirring often.
  7. Sprinkle shredded cheese over the top, then cover and heat for 2 minutes or until the cheese melts.
