Ingredients

  • 3 1/2 cups fresh or thawed frozen corn kernels
  • 1 (4 oz) can green chilies, drained
  • 3 cups reduced sodium chicken broth
  • 2 tablespoons chopped fresh cilantro
  • 1 cup nonfat dry milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine 3 cups of the corn, the green chilies, and 1 cup of chicken broth in a blender or food processor.
  2. Whirl for 2 minutes or until smooth.
  3. Pour the corn puree mixture into a medium-sized saucepan. Add the remaining corn.
  4. Dissolve the dry milk powder in the remaining broth; stir into the saucepan.
  5. Bring to a boil over medium heat.
  6. Remove the saucepan from heat.
  7. Stir in salt, black pepper, and chopped cilantro.
  8. Transfer the chowder to a bowl.
  9. Chill the chowder, covered, for 4 hours or overnight before serving.
