  • 1/2 c chopped green onions

  2. Heat 2 tablespoons of peanut oil in a wok or large skillet. Stir-fry the pea pods for 1 minute until bright green.
  3. Remove the pea pods from the wok and keep warm.
  4. Add remaining oil to the wok and heat.
  5. Stir-fry the chopped onion until lightly browned, about 2-3 minutes.
  6. Add the sliced beef to the wok and stir-fry over high heat until just cooked, about 3-4 minutes.
  7. Pour off excess grease from the wok.
  8. Stir in curry powder and salt; cook for about 3-4 minutes until a fragrant aroma is released.
  9. Add the cooked rice to the wok and combine thoroughly.
  10. Heat everything through, then sprinkle with chopped green onions and cayenne pepper or crushed red pepper before serving.
