Ingredients

  • 1 tsp. cornstarch
  • 1 Tbsp. water
  • 1 egg white
  • 2 large chicken breasts, skinned, boned, and cut into 1-inch cubes
  • 3 Tbsp. soy sauce
  • 1 Tbsp. bourbon
  • 1/2 tsp. sugar
  • 4 Tbsp. oil
  • 3 green onions, cut into 2-inch slivers
  • 2 slices fresh ginger root, minced
  • 1 garlic clove, minced
  • 3/4 c. chopped walnuts
  • rice

Instructions

  1. Mix together the cornstarch, water, and egg white in a bowl.
  2. Add the chicken cubes to the mixture and toss until thoroughly coated.
  3. Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat.
  4. Add the coated chicken pieces and stir-fry until golden brown and cooked through, about 5-7 minutes.
  5. Remove the chicken and set aside.
  6. In the same pan, add the remaining oil, then stir-fry the minced ginger and garlic until fragrant, about 1 minute.
  7. Add the chopped green onions and cook for another 1-2 minutes.
  8. Return the cooked chicken to the pan, add soy sauce, bourbon, and sugar, and stir to combine.
  9. Add the chopped walnuts and cook for an additional 2 minutes until heated through.
  10. Serve hot with rice.
