Tips & Substitutions

For a moister cake, consider adding a bit of applesauce or swapping some of the vegetable oil for melted butter. If you don't have buttermilk, you can make a substitute by mixing milk with a splash of vinegar or lemon juice. Ensure you drain the pineapple well to prevent excess moisture in the batter, which can affect the cake's texture.

Serving Suggestions

This carrot cake pairs beautifully with a rich Cream Cheese Frosting, which complements its flavors perfectly. For a delightful contrast, serve with a refreshing Strawberry Fling (Non-Alcoholic Drink) or a side of Ma'S Salad to balance the sweetness. Enjoy it as a dessert or a special occasion treat alongside coffee or tea.

Storage & Reheating

Store leftover carrot cake in an airtight container in the refrigerator, where it will keep for about 5 to 7 days. For longer storage, you can freeze the cake layers wrapped tightly in plastic wrap for up to 3 months. To reheat, let thaw in the fridge overnight and bring to room temperature before serving.
