Ingredients

  • 1 large onion
  • 2 Tbsp oil
  • 1/2 lb ground beef
  • 8 to 10 fresh red or green peppers
  • 1 1/2 cups uncooked rice
  • 1 tsp seasoned salt
  • 1/2 tsp pepper
  • 2 (6 oz) cans tomato sauce
  • 1 cup hot water
  • 1 beef bouillon cube
  • 2 eggs
  • 1 pint sour cream
  • 4 oz grated mild cheese

Instructions

  1. Wash and core the peppers; set aside.
  2. Chop the onion and sauté in oil until translucent.
  3. Add ground beef and cook until pink is gone and beef is crumbly.
  4. Add rice and continue to sauté for 6 to 8 minutes.
  5. Season with seasoned salt and pepper.
  6. Mix tomato sauce, hot water, and beef bouillon cube to make a sauce.
  7. Stuff the peppers with the beef and rice mixture.
  8. Place stuffed peppers in a baking dish and pour sauce over them.
  9. Cover and bake at 375°F (190°C) for about 30-40 minutes.
  10. Beat eggs and mix with sour cream and grated cheese.
  11. Remove peppers from oven, spoon cheese mixture over, and bake uncovered for an additional 10 minutes until golden.
