Christmas Coconut Cake

Ingredients

  • 1 cup butter, softened
  • 2 cups sugar
  • 7 eggs
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • dash of salt
  • 1 cup buttermilk
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 can flaked coconut
  • red and green candied cherries
  • red and green candied cherries

Instructions

  1. Cream butter; gradually add sugar and beat 10 to 15 minutes at medium speed of electric mixer.
  2. Add eggs, one at a time, beating well after each addition.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Alternately add flour mixture and buttermilk to the creamed mixture, beginning and ending with flour.
  5. Stir in vegetable oil, vanilla extract, and coconut extract.
  6. Pour batter into prepared cake pans and bake at 350°F (175°C) for about 45 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool cakes in pans for 10 minutes, then remove from pans and cool completely on wire racks.
  8. Frost with coconut frosting, then decorate with flaked coconut and candied cherries.
