Ingredients

  • 2 yeast cakes
  • 3 pkg. granulated yeast
  • 3/4 cup white sugar
  • 1 quart lukewarm milk
  • 4 well beaten eggs
  • 8 cups flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon anise seed
  • 1/2 pound butter
  • 1 teaspoon salt
  • 1/2 cup orange peel
  • 1/2 cup citron

Instructions

  1. Scald milk and cool to lukewarm.
  2. Add yeast cakes and 6 cups of flour to make a batter.
  3. Let the batter rise until doubled in size.
  4. Add sugar, well beaten eggs, melted butter, and salt to the batter.
  5. Cover the raisins, citron, orange peel, and chopped nuts with flour and mix well.
  6. Fold the floured fruit and nuts into the batter with the remaining flour and seasonings.
  7. Knead the mixture into a stiff dough.
  8. Let the dough rise until doubled in bulk.
  9. Divide the dough and put into pans.
  10. Bake at 350°F until golden brown, about 60 minutes.
  11. Remove from oven, brush loaves with melted butter.
  12. Cool the loaves, then wrap.
