Chunky cheese spaghetti combines tender chicken, colorful vegetables, and melted mozzarella in a hearty sauce, perfect for family dinners and those craving comforting, flavorful Italian-inspired dishes.

Ingredients

  • 4 boneless chicken breast halves
  • 2 Tbsp. olive oil
  • 3 medium zucchini
  • 1 green pepper
  • 1 red pepper
  • 8 oz. mushrooms
  • 1/4 cup chopped onion
  • 1 garlic clove
  • 1 jar (26 oz.) spaghetti sauce
  • 1 cup shredded Mozzarella cheese
  • 1 lb. spaghetti

Instructions

  1. Cook the chicken in a skillet until no longer pink.
  2. Remove the chicken from the pan and drain all but 1 tablespoon of oil.
  3. Add zucchini, green pepper, red pepper, mushrooms, onion, and garlic to the skillet.
  4. Cook and stir over medium-high heat until the vegetables are crisp-tender.
  5. Add the cooked chicken and spaghetti sauce to the skillet.
  6. Cook until the mixture is thoroughly heated.
  7. Add the shredded mozzarella cheese and cook and stir just until the cheese melts.
  8. Pour the sauce over cooked spaghetti and sprinkle with parsley.
