Ingredients

  • 16 oz manicotti shells
  • 1/4 cup butter
  • 2 1/2 cups milk
  • 1/4 cup flour
  • 2 eggs
  • 3/4 cup grated Parmesan cheese
  • 1 lb bulk Italian sausage
  • 4 cups cooked diced chicken
  • 10 oz frozen chopped spinach
  • 4 oz shredded Mozzarella cheese
  • 2 cans spaghetti sauce
  • 1/4 cup minced fresh parsley

Instructions

  1. Cook manicotti shells according to package directions and set aside.
  2. Melt butter in a saucepan over medium heat.
  3. Stir in flour until smooth to make a roux.
  4. Gradually add milk, bring to a boil, and cook for 2 minutes until thickened.
  5. Stir in Parmesan cheese until melted and set aside.
  6. In a large skillet, cook Italian sausage until browned.
  7. Add cooked diced chicken and cook until heated through.
  8. Mix in thawed and squeezed dry chopped spinach.
  9. Stuff cooked manicotti shells with the meat and spinach mixture.
  10. Preheat oven to 375°F (190°C).
  11. Spread a layer of spaghetti sauce in a baking dish.
  12. Arrange stuffed manicotti in the dish.
  13. Pour remaining spaghetti sauce over the top.
  14. Sprinkle shredded mozzarella cheese and minced parsley over the sauce.
  15. Cover with foil and bake for 25-30 minutes until bubbly and cheese is melted.
  16. Remove foil and bake an additional 5-10 minutes for a browned top if desired.
  17. Serve hot, garnished with extra parsley if desired.
