Ingredients

  • 3/4 cup beef base
  • 2 large cans beef broth
  • 1 stick butter
  • 4 quarts tomato juice
  • 1 3/4 cups sugar
  • 1/4 cup salt or less
  • 4 quarts carrots
  • 2 quarts green beans
  • 3 quarts peas
  • 4 quarts potatoes
  • 2 quarts flour
  • 8 pounds hamburger
  • 2 large onions

Instructions

  1. Heat 2 1/2 quarts of water, beef base, beef broth, butter, tomato juice, sugar, and 1/4 cup salt until boiling.
  2. Cut vegetables into small cubes.
  3. Cook vegetables separately in salted water, then add to the soup mixture.
  4. Mix less than 2 quarts of flour with enough water to make a smooth paste for thickening the soup.
  5. Season hamburger with salt and pepper if not already seasoned.
  6. Add chopped onions; fry in flour and butter mixture.
  7. Combine cooked hamburger and drippings with the soup.
  8. Optional: add some beef chunks instead of all hamburger.
  9. Cold pack the soup for 2 hours.
  10. Pressure cook the soup for 40 minutes at 10 pounds of pressure.
