Ingredients

  • 1 medium onion
  • 3 cloves garlic
  • 1 ground yellow chili
  • 2 dried chilies
  • 1 medium peeled tomato
  • 3 1/2 liters water
  • 1/2 kilo yellow potatoes
  • 1/4 kilo young peas
  • 2 large ears of corn, cut into 8 portions
  • 16 large shrimp
  • 1/2 cup rice
  • 1 cup evaporated milk
  • 3 eggs
  • pinch of marjoram
  • 2 tablespoons finely chopped parsley
  • salt
  • pepper

Instructions

  1. Put enough oil to cover the bottom of a pot and heat until hot.
  2. Add tomato slices and brown them well.
  3. Add finely chopped onion, ground yellow chili, garlic, salt, pepper, and marjoram; fry until fragrant.
  4. Add the washed shrimp, 2 finely cut yellow potatoes, peas, corn portions, and rice.
  5. Cook over a slow fire until peas and rice are nearly done.
  6. Add the remaining yellow potatoes cut in two and cook until tender.
  7. Add eggs without beating and stir immediately to coagulate in large pieces.
  8. Add browned dried chili strips, evaporated milk, and chopped parsley.
  9. Stir well and serve hot.
