Ingredients

  • 3/4 cup sugar
  • 3/4 cup hot mashed potatoes
  • 1 1/2 cups warm water
  • 2 packages active dry yeast
  • 1/2 cup butter or margarine
  • 2 eggs
  • 2 teaspoons salt
  • 6 1/2 cups flour
  • 1 1/3 cups packed brown sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons cream

Instructions

  1. Combine sugar and mashed potatoes in a large bowl; add warm water and yeast to the mixture.
  2. Cover and let sit for 1 hour in a warm place.
  3. Prepare the filling by mixing brown sugar and cinnamon; set aside.
  4. Stir the dough down after fermentation.
  5. Mix in butter, eggs, and salt into the dough.
  6. Gradually add flour, mixing until a dough forms.
  7. Turn out the dough onto a floured surface and knead until smooth.
  8. Divide the dough in half and roll each half into a square.
  9. Spread the filling evenly on each square of dough.
  10. Roll up each square and cut into slices.
  11. Place the slices in a 9-inch pan.
  12. Cover and let rise until doubled in volume.
  13. Bake at 350°F (175°C) for 35 to 40 minutes.
