Cioppino(Cha-Pee-No)

Ingredients
- 1 lb. fresh fish fillets (cod works well) ⓘ
- 1 large green pepper ⓘ
- 2 Tbsp. finely chopped onion ⓘ
- 2 cloves minced garlic ⓘ
- 1 Tbsp. olive oil ⓘ
- 1 (16 oz.) can tomatoes, cut up
- 1 small can tomato paste ⓘ
- 1 c. white or red wine ⓘ
- 3 Tbsp. snipped fresh parsley ⓘ
- 1/2 tsp. salt ⓘ
- 1/4 tsp. dried and crushed or freshly snipped oregano ⓘ
- dash of pepper ⓘ
- 1/4 tsp. dried and crushed or freshly snipped basil ⓘ
- 12 oz. frozen shelled shrimp ⓘ
Instructions
- Thaw the shrimp if frozen.
- Remove any skin from the fish fillets and cut into 1-inch pieces. Set aside.
- Cut the green pepper into 1/2-inch squares.
- In a large pot, heat olive oil over medium heat.
- Add finely chopped onion and minced garlic; cook until fragrant and translucent.
- Stir in the chopped green pepper and cook for a few minutes.
- Add the canned tomatoes, tomato paste mixed with wine, salt, oregano, basil, and pepper.
- Bring the mixture to a simmer and cook for about 10 minutes to develop flavors.
- Add the frozen shrimp and canned minced clams to the broth.
- Simmer for an additional 10-15 minutes until the seafood is cooked through.
- Stir in chopped fresh parsley before serving.
