Ingredients

  • 1 lb. fresh fish fillets (cod works well)
  • 1 large green pepper
  • 2 Tbsp. finely chopped onion
  • 2 cloves minced garlic
  • 1 Tbsp. olive oil
  • 1 (16 oz.) can tomatoes, cut up
  • 1 small can tomato paste
  • 1 c. white or red wine
  • 3 Tbsp. snipped fresh parsley
  • 1/2 tsp. salt
  • 1/4 tsp. dried and crushed or freshly snipped oregano
  • dash of pepper
  • 1/4 tsp. dried and crushed or freshly snipped basil
  • 12 oz. frozen shelled shrimp

Instructions

  1. Thaw the shrimp if frozen.
  2. Remove any skin from the fish fillets and cut into 1-inch pieces. Set aside.
  3. Cut the green pepper into 1/2-inch squares.
  4. In a large pot, heat olive oil over medium heat.
  5. Add finely chopped onion and minced garlic; cook until fragrant and translucent.
  6. Stir in the chopped green pepper and cook for a few minutes.
  7. Add the canned tomatoes, tomato paste mixed with wine, salt, oregano, basil, and pepper.
  8. Bring the mixture to a simmer and cook for about 10 minutes to develop flavors.
  9. Add the frozen shrimp and canned minced clams to the broth.
  10. Simmer for an additional 10-15 minutes until the seafood is cooked through.
  11. Stir in chopped fresh parsley before serving.
