Ingredients

  • 2 lb. boneless chicken breasts
  • 8 cloves garlic, mashed
  • 1 Tbsp. oregano
  • salt to taste
  • pepper to taste
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 cup pitted prunes
  • 1/2 cup capers
  • 6 bay leaves
  • 1 cup brown sugar
  • 1 cup white wine
  • 1/4 cup minced parsley

Instructions

  1. Trim chicken breasts and cut into bite-sized pieces.
  2. Marinate the chicken with garlic, oregano, salt, pepper, vinegar, oil, prunes, olives, capers, and bay leaves for 8 hours.
  3. Pour the marinated mixture into a roasting pan in a single layer.
  4. Combine sugar with white wine.
  5. Pour the wine mixture over the chicken mixture.
  6. Bake in a 425°F oven for 10 minutes.
  7. Do not overcook the chicken.
  8. Add minced parsley before serving.
