Ingredients

  • 1/4 cup butter or margarine
  • 1/4 cup flour
  • 1 1/2 cups chicken broth
  • 1 2/3 cups evaporated milk
  • 1/2 to 1 1/2 teaspoons salt
  • 2 1/2 cups cut-up cold chicken or turkey
  • 3 cups cooked rice
  • can mushrooms (optional)
  • 1/4 cup diced pimento (optional)
  • 1/3 cup chopped green pepper (optional)
  • 1/2 cup sliced almonds, toasted

Instructions

  1. Melt butter or margarine in a saucepan; blend in flour.
  2. Gradually add chicken broth and evaporated milk, stirring constantly.
  3. Cook and stir over low heat until thickened.
  4. Add salt, chicken, cooked rice, and optional vegetables like mushrooms, pimento, and green pepper.
  5. Pour mixture into a greased 2-quart, 7 1/2 x 11-inch dish.
  6. Bake at 350°F for 30 minutes.
  7. Sprinkle with toasted sliced almonds before serving.
