Ingredients

  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/4 cup heavy or whipping cream
  • 1 (6 1/2 oz.) can salted peanuts
  • 3 tablespoons cocoa
  • 1 tablespoon butter or margarine
  • 1 teaspoon baking soda

Instructions

  1. Lightly grease a large cookie sheet and set aside two hours before serving or up to one week ahead.
  2. In a heavy 2-quart saucepan, over medium heat, beat together sugar, corn syrup, and heavy cream until boiling, stirring constantly until the sugar is dissolved.
  3. Stir in the salted peanuts and continue cooking until the mixture reaches the hard crack stage, approximately 300°F (150°C).
  4. Remove from heat and quickly stir in the cocoa, butter, and baking soda until well combined.
  5. Pour the hot mixture onto the prepared cookie sheet and spread evenly.
  6. Allow to cool completely before breaking into pieces.
