Ingredients

  • 3/4 cup plus 1 tablespoon baking cocoa
  • 2/3 cup boiling water
  • 1 3/4 cups flour
  • 1 1/2 teaspoons soda
  • 1/4 teaspoon salt
  • 3/4 cup butter, softened
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 3/4 cup buttermilk
  • 1 (3 oz) can coconut
  • 1 (3 oz.) can coconut

Instructions

  1. Mix baking cocoa with boiling water in a small bowl until smooth.
  2. Mix flour, soda, and salt together in a separate bowl.
  3. Cream butter, sugar, and vanilla in a large mixer bowl until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Add the flour mixture alternately with buttermilk, beating well after each addition. Stir in the cocoa mixture.
  6. Pour the batter into two greased and floured 9-inch round cake pans.
  7. Bake at 350°F (175°C) for 35 minutes.
  8. Cool in pans for 10 minutes.
  9. Remove from pans and cool completely on wire racks.
  10. Spread frosting between layers and over the top and sides of the cake.
  11. Sprinkle with coconut and press lightly into the frosting.
