Ingredients

  • 1 lb. salty codfish
  • 4 c. flour
  • 2 tsp. baking soda
  • 1 egg
  • 1 1/2 c. water
  • 1 c. milk
  • 4 stalks scallions, finely chopped
  • 3 Tbsp. chopped fresh parsley
  • 2 cloves garlic, finely chopped
  • 1/2 tsp. black pepper
  • 1 tsp. chopped fresh hot pepper (optional)
  • 1 small grated onion

Instructions

  1. Soak the salted codfish in cold water overnight, then discard the water.
  2. Bring a quart of water to a boil, add the codfish, and turn off the heat. Let sit for 10 minutes.
  3. Discard the water, cool the codfish, and shred it into small pieces.
  4. In a mixing bowl, beat the egg with 1 1/2 cups of water and milk.
  5. Gradually add the flour and baking soda to the egg mixture, stirring to make a soft paste.
  6. Add the shredded codfish, chopped scallions, chopped parsley, chopped garlic, black pepper, hot pepper (if using), and grated onion to the batter.
  7. Mix well to combine all ingredients thoroughly.
  8. Heat oil in a deep fryer or large skillet.
  9. Drop 1 tablespoon of the batter into hot oil for each cake and fry until golden brown and crispy.
  10. Remove from oil and drain on paper towels before serving.
