Ingredients

  • 2 lb. stew beef or hamburger
  • 1 medium size onion
  • 2 Tbsp. vegetable oil
  • 1 jar mushrooms or pieces
  • 4 medium potatoes, pared, thinly sliced
  • 1 can cream of mushroom soup
  • 3/4 c. milk
  • 3/4 c. dairy sour cream
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 c. shredded Cheddar cheese

Instructions

  1. Brown the stew beef or hamburger with the chopped onion in a large skillet in vegetable oil.
  2. Drain off the excess oil after browning.
  3. Drain the mushrooms, reserving the liquid.
  4. Add enough water to the mushroom liquid to make one cup.
  5. Stir the mushrooms and mushroom liquid into the meat and onions.
  6. Heat the mixture to boiling, then reduce heat and cover.
  7. Simmer for 2 hours if using stew meat or 1 hour if using hamburger, making sure it doesn't cook dry.
  8. Add water if necessary during simmering.
