Meatball - Potato Scallop

Ingredients
- 1 lb. ground beef ⓘ
- 1 egg ⓘ
- 2 Tbsp. fine dry bread crumbs ⓘ
- 2 Tbsp. parsley flakes ⓘ
- 1 tsp. salt ⓘ
- 1/4 tsp. pepper ⓘ
- 1 Tbsp. olive or vegetable oil ⓘ
- 1 medium onion, chopped
- 1 (10 1/2 oz.) can condensed cream of mushroom soup ⓘ
- 2 Tbsp. Worcestershire sauce ⓘ
- 2 or 3 large potatoes, peeled, thinly sliced and cooked ⓘ
- 1 (8 oz.) can whole kernel corn, drained ⓘ
- grated Cheddar cheese (optional) ⓘ
Instructions
- Mix ground beef, egg, bread crumbs, parsley flakes, salt, and pepper lightly until well combined. Shape into 16 meatballs.
- Brown the meatballs on all sides in 1 tablespoon of oil in a skillet.
- Remove meatballs from the skillet and pour off all but 1 tablespoon of fat.
- Add chopped onion to the skillet and sauté for 2 to 3 minutes.
- Add condensed cream of mushroom soup, Worcestershire sauce, and about 1/2 cup water to the skillet.
- Return the meatballs to the skillet and simmer the mixture for 5 minutes.
