Ingredients

  • 1 (1 oz.) pkg. dry Ranch salad dressing mix
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 (9-inch) pan Tex-Mex corn bread, crumbled
  • 2 (16 oz.) cans pinto beans, drained
  • 3 large tomatoes, chopped
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped green onions
  • 8 oz. shredded Cheddar cheese
  • 10 slices bacon, cooked and crumbled
  • 2 (17 oz.) cans whole kernel corn, drained
  • tomato wedges (optional)

Instructions

  1. Combine the dry Ranch salad dressing mix, sour cream, and mayonnaise in a bowl.
  2. Set the dressing mixture aside.
  3. Crumb the Tex-Mex corn bread and place in a large mixing bowl.
  4. Add drained pinto beans, chopped tomatoes, chopped green pepper, chopped green onions, shredded Cheddar cheese, crumbled bacon, drained whole kernel corn, and tomato wedges if desired.
  5. Pour the dressing mixture over the salad ingredients and gently toss to combine.
  6. Serve immediately or refrigerate until ready to serve.
