A creamy, flavorful corn bread salad combining Tex-Mex flavors, fresh vegetables, cheese, and bacon, perfect for potlucks, picnics, or casual gatherings with a hearty twist.
Ingredients
- 1 (1 oz.) pkg. dry Ranch salad dressing mix ⓘ
- 1 cup sour cream ⓘ
- 1 cup mayonnaise ⓘ
- 1 (9-inch) pan Tex-Mex corn bread, crumbled ⓘ
- 2 (16 oz.) cans pinto beans, drained ⓘ
- 3 large tomatoes, chopped ⓘ
- 1/2 cup chopped green pepper
- 1/2 cup chopped green onions ⓘ
- 8 oz. shredded Cheddar cheese ⓘ
- 10 slices bacon, cooked and crumbled ⓘ
- 2 (17 oz.) cans whole kernel corn, drained ⓘ

Instructions
- Combine the dry Ranch salad dressing mix, sour cream, and mayonnaise in a bowl.
- Set the dressing mixture aside.
- Crumb the Tex-Mex corn bread and place in a large mixing bowl.
- Add drained pinto beans, chopped tomatoes, chopped green pepper, chopped green onions, shredded Cheddar cheese, crumbled bacon, drained whole kernel corn, and tomato wedges if desired.
- Pour the dressing mixture over the salad ingredients and gently toss to combine.
- Serve immediately or refrigerate until ready to serve.
