Ingredients

  • 2 c. self-rising cornmeal
  • 1 (8 oz.) can cream-style corn
  • 2 eggs
  • 1 c. Cheddar cheese, grated
  • jalapeno pepper (optional)
  • 1/2 to 1 lb. ground beef
  • 1/2 c. oil
  • 1 large onion

Instructions

  1. Combine cornmeal, cream-style corn, and eggs in a mixing bowl.
  2. Heat a frying pan and add oil.
  3. Pour half of the cornmeal mixture into the frying pan.
  4. Top with grated Cheddar cheese and cooked, drained ground beef.
  5. Add jalapeno peppers if desired.
  6. Add chopped onion over the beef.
  7. Pour the remaining cornmeal mixture over the top.
  8. Bake at 350°F for 45 minutes until golden and cooked through.
