Ingredients

  • 2 tsp butter
  • 3 eggs
  • 1 can cream-style corn
  • 1 can white Shoe Peg corn, drained
  • 1/2 stick oleo
  • 1/2 c cornmeal
  • 1 c sour cream
  • 4 oz Monterey Jack cheese, cubed
  • 4 oz sharp Cheddar cheese, cubed
  • 1 Tbsp Worcestershire sauce
  • 1 (4 oz) can green chilies, chopped and undrained

Instructions

  1. Preheat oven to 350°F (175°C). Melt butter in a large baking dish.
  2. In a mixing bowl, combine beaten eggs, cream-style corn, drained Shoe Peg corn, oleo, cornmeal, sour cream, cubed Monterey Jack cheese, cubed sharp Cheddar cheese, Worcestershire sauce, and chopped green chilies.
  3. Mix well until all ingredients are thoroughly combined.
  4. Pour the mixture into the prepared baking dish with melted butter.
  5. Bake uncovered in the preheated oven for 1 hour or until the pie is firm when pressed in the center.
  6. Allow to cool slightly before serving. The corn meal on top will form a thin crust.
