Ingredients

  • 1-16 oz can creamed corn
  • 1-14 oz can whole kernel corn
  • 2 eggs
  • 1-8 oz container sour cream
  • 1 teaspoon salt
  • 1-8 oz package Jiffy Cornbread Mix
  • 1/2 stick margarine
  • 1/2 cup chopped red or green peppers
  • 1/2 cup chopped onion

Instructions

  1. Melt margarine in an 8 x 12 x 2 inch casserole dish.
  2. Mix creamed corn, whole kernel corn, eggs, sour cream, salt, and cornbread mix in a bowl.
  3. Pour the corn mixture over the melted margarine in the casserole dish.
  4. Add chopped peppers and onions on top before baking.
