Ingredients

  • 1 small onion, chopped
  • 1/2 green pepper, chopped
  • 1/4 tsp. salt
  • 1/4 lb. butter
  • 1 (16 oz.) can whole corn
  • 1 (16 oz.) can cream-style corn
  • 3 eggs
  • 1 (8 1/2 oz.) box muffin mix
  • 1 1/2 cups (6 oz.) shredded Cheddar cheese

Instructions

  1. Saute chopped onion, green pepper, and salt in butter until tender.
  2. Combine both cans of corn, eggs, muffin mix, and 1 cup of shredded Cheddar cheese.
  3. Mix the corn mixture with the sautéed vegetables and pour into a 1 1/2-quart casserole dish.
  4. Top with the remaining cheese.
  5. Bake at 350°F (175°C) for 40 minutes until golden and set.
