Ingredients

  • 1 cup flour
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 tablespoon soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups shortening
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups shredded coconut
  • 2 cups corn flakes

Instructions

  1. Sift together flour, baking soda, salt, and baking powder.
  2. Cream shortening, sugar, and brown sugar together until light and fluffy.
  3. Add beaten eggs and vanilla to the creamed mixture and mix well.
  4. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  5. Fold in shredded coconut and corn flakes gently.
  6. Drop teaspoonfuls of dough onto greased cookie sheets, spacing them evenly.
  7. Bake at 350°F (175°C) for 8 to 10 minutes until golden brown.
  8. Remove from oven, cool slightly, then transfer to wire racks to cool completely.
