Ingredients

  • 1 cup thinly sliced onion
  • 2 tablespoons butter or margarine
  • 1 cup diced cooked potato
  • 1 cup luncheon meat, diced (Spam)
  • 2 cans cream-style corn
  • 1 can cream of mushroom soup
  • 2 1/2 cups milk
  • 1 can chicken broth
  • 1/4 teaspoon salt
  • dash of pepper
  • chopped parsley

Instructions

  1. In a large saucepan, cook the sliced onion in butter until softened, then add diced Spam and brown slightly.
  2. Add diced cooked potato, cream-style corn, cream of mushroom soup, milk, salt, and pepper; heat until boiling.
  3. Add chicken broth to achieve desired consistency and stir well.
  4. Serve hot, garnished with chopped parsley.
