Ingredients

  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup brown sugar
  • 2/3 cup cornmeal
  • 2/3 cup quick cooking oats
  • 2/3 cup dried coconut flakes
  • 2 eggs
  • 1 1/2 cups buttermilk
  • 5 tablespoons butter
  • 2/3 cup chopped walnuts

Instructions

  1. Preheat oven to 400°F and grease the muffin pan.
  2. In a bowl, mix together flour, baking powder, baking soda, and salt.
  3. Stir in brown sugar, cornmeal, chopped walnuts, oats, and coconut flakes.
  4. In a separate bowl, add melted butter, eggs, and buttermilk.
  5. Blend the dry ingredients with the wet mixture. Do not overstir.
  6. Fill muffin cups with the batter.
  7. Bake until a toothpick inserted in the center comes out clean.
